SABLÉ DE WISSANT

History

The town of Wissant on the Opale coastline is a small seaside resort with particularly fine sand. It is a charming backdrop with a pleasant lifestyle. Wissant inspired us to create our Sablé de Wissant. Today, with our Écume de Wimereux, it is one of our most legendary cheeses. A soft cheese with a washed rind, from the outside the Sablé de Wissant looks like its cousin, Maroilles. But it’s softer and creamier than its Northern cousin. This cheese melts particularly easily and is ideal for cooking. It is not uncommon for Boulonnais families to use our Sablé de Wissant in their traditional raclette and tartiflette recipes. It is distributed throughout France and internationally. Our Sablé de Wissant will be on board Japan’s Ana Airlines this year!

Our work

Sablé de Wissant is a soft cheese with a washed rind. It is made with traditional artisan methods using milk sourced from neighbouring Côte d’Opale dairy farms. This square cheese is brushed with Blanche de Wissant beer created by Christophe Noyon’s brewery in Tardinghem during the maturing period of four to five weeks. It’s a very mild white beer with orange and coriander aromas that gives extra flavour to the rind of the Sablé de Wissant. When maturing and before packaging, the Sablé de Wissant is rolled in a fine coat of breadcrumbs, to give the thickened rind extra flavour. We recommend keeping the rind on this cheese which is where the original aromas and texture lie.

Good to know ...

The external appearance of the Sablé de Wissant is reminiscent of the fine sand on Wissant beach. The delicious fragrance evokes the beer used for brushing the cheese. The palate is fine and fragrant, but the breadcrumbs give it a delicious, crunchy texture. This cheese is delicious all year-round and can be used in your favourite dishes. Tantalise your taste buds with Sablé de Wissant in a sauce, melted in a dish, or on toast.

 

Sainte Godeleine dairy recently decided to make a new version. The Sainte Godeleine is similar to Sablé de Wissant, without breadcrumbs and brushed with Noire de Slack® beer which gives it a strong character. Sainte Godeleine is only available in our Wierre-Effroy shop at the moment.
