Fruité du Cap Gris Nez

History

The Fruité du Cap Gris-Nez is an original creation by the Bernard brothers. It is a tribute to our beautiful region and a testament to our expertise. Our original Fruitée du Cap Gris-Nez is brushed with beer. And not just any beer! We use a 2 Caps pale ale brewed by Christophe Noyon in Tardinghen on the Côte d’Opale.

Our work

The milk is sourced from our local producers in the local surroundings. The milk is pasteurised, then the cheese is moulded into a round shape. The cheese is then brushed with 2 Caps pale ale once or twice a week during the maturing period of three to four weeks. This process gives the cheese flavour and generates bacteria: the red Brevibacterium linens. That’s what gives our Fruitée Cap Gris-Nez its orange colour and strong aroma.

Fruitée de Cap Gris-Nez has the typical strong aroma of tender washed-rind cheeses. It has a round, smooth palate with a fruity flavour given by pale ale. This cheese releases abundant aromas when melted. Replace your usual choice in all your favourite recipes with melted cheese like gratin, raclette and tartiflette.
